Simple Sautéed Lion's Mane Mushrooms
Use this quick and easy recipe to cook up some tasty Lion's Mane. Enjoy as a side dish, add to stir fry or an omelet, or as a delectable, protein-rich topping for your favorite avocado toast!

INGREDIENTS
- 8 ounces Lion's Mane mushrooms
- 1 tablespoon olive oil
- 1 tablespoon butter
- ¼ teaspoon garlic powder
- ½ teaspoon soy sauce or tamari
- ½ salt to taste
DIRECTIONS
- Gently brush off any remnants of hardwood sawdust the mushrooms grew on, and trim off the very base of the mushrooms.
- Slice mushrooms 1/4" - 1/2" thick. You can maintain "rounds" or chop them smaller once you have sliced for thickness, depending on what you plan to do with them.
- Heat a skillet to medium-high heat. Add the mushrooms in a single layer. Cook dry until deeply browned on one side, about 2-3 minutes. Flip and repeat on the other side.
- Reduce heat to medium and add the olive oil. Swirl the pan to coat. Cook another 2 minutes. Add the remaining ingredients and stir gently, cooking 2 more minutes.
NOTES
Getting a deep brown on Lion's Mane is super important, and that won't happen well if they're crowded. When you dry cook them in the skillet, place the mushrooms in a single layer. You may need to repeat this process depending on the size of your skillet. As they cook, they release a lot of moisture and shrink in size. If doing batches, move from the skillet to a bowl after deeply browned, then brown the next batch. Return all mushrooms to the pan once it's time to add the olive oil.
