Simple Sautéed Black Oyster Mushrooms

This quick and easy recipe will give you delicious, protein-rich and nutrient-dense Black Oyster mushrooms to enjoy as a tasty side dish, add to pasta or soups, to serve with grilled meat…use your imagination!

INGREDIENTS

  •       8 ounces Black Oyster mushrooms
  •       1+ T olive oil
  •       2 cloves garlic, minced
  •       3 springs of fresh thyme
  •       1 tablespoon butter or ghee
  •       Salt and pepper to taste

DIRECTIONS

  •       Trim of the very end of the mushroom stems. You can leave mushrooms whole, cut them length-wise, or slice the stems into several little medallions and keep the cap whole. Whatever you choose, it’s best to work with similarly sized pieces of mushrooms so they cook evenly. 
  •       Heat olive oil in a skillet over medium-high heat, then add the mushrooms, cooking 3-5 minutes without stirring until they begin to brown. 
  •       Continue to sautee, stirring occasionally, for another 3-5 minutes, or until the mushrooms are very well browned. 
  •       Add the butter/ghee, garlic, and thyme and reduce heat to low. Cook about 5 minutes more, stirring frequently, until the mushrooms are dark brown and crisped to your liking. 
  •       Remove thyme sprigs, season with S+P to taste, and enjoy!
