Simple Sautéed Pink Oyster Mushrooms

Our stunning Pink Oyster mushrooms cook up in just a few minutes with olive oil and salt. They're a delicious snack (our kids love them!), a great side dish, and are perfect in a breakfast scramble, tossed in with pasta, as a taco filling, or as a bacon substitute - the possibilities are endless!

Servings: 2

INGREDIENTS

  • 8 ounces Pink Oyster mushrooms
  • 2 Tablespoons olive oil
  • A few big grinds of salt

DIRECTIONS

  • Gently pull or cut the mushroom caps off the larger stem, then trim any remaining white stem from each cap. Cut to desired size.
  • Heat olive oil in a skillet over medium-high heat, then add the mushrooms and salt.
  • Sauté, stirring occasionally, until the mushrooms are well browned on both sides. The crispier you let them get, the more "bacony" they'll taste.
  • Season to taste, and enjoy!
